Para 4 personas:<br />

Ingredientes:<br />
4 Panes de muy buena calidad<br />
400gr de Lomo de cerdo<br />
100 gr de mantequilla clarificada<br />
Sal de mar<br />
Pimienta molida<br />
Chile en polvo<br />
80 gr Azucar<br />
Piel rallada de 1 limón, 1 naranja, 1 lima, 1 mandarina<br />
100gr de vinagre balsamico<br />
30 gr de vinagre de arroz o de frutas<br />
250gr de cebolla paiteña en juliana<br />
1 olla con 2 litros de agua<br />
1 Bolsa Ziploc<br />
300gr de guacamole<br />
<br />
En una sartén se colocan 30 gramos de mantequilla clarificada, y cuando este muy caliente se cocinan las cebollas por 10 minutos salteando frecuentemente. Se añade el el vinagre balsámico y 30 gramos de azúcar y se deja reducir totalmente hasta que las cebollas adquieran un gusto dulce y un color intenso.<br />
<br />
En la bolsa, se coloca el lomo de cerdo, la mantequilla, sal, pimienta y chili al gusto, el resto del azúcar, la ralladura de los cítricos, el vinagre de arroz y un poco de las cebollas caramelizadas, se expulsa la mayor cantidad de aire posible y se cierra herméticamente.<br />
<br />
Colocar la bolsa en la olla con agua y calentarla a 75ºc (o un poco menos del punto de ebullición si no tienen termómetro) y cocinar por 3 horas.<br />
<br />
Una vez cocido, retirar los lomitos de la bolsa y dorarlos levemente en una sartén (si es posible flamearlo con jack daniel´s... no se arrepentirán!)<br />
<br />
Para armar el Chanduche:<br />
Lomo con el jugo de la reducción de jack, guacamole y cebollas caramelizadas. todo eso en un pan.<br />
